White Fish with Sautéed Vegetables


  • 10 stalks asparagus
  • 1 yellow & 1 red capsicum cut into strips
  • 4 tbsp pine nuts
  • 4 pieces white or dory fish
  • 3 cloves of garlic (sliced)
  • 150g baby spinach
  • small quantity of salt
  • small quantity of extra virgin olive oil
  • 50ml sunflower oil
  • 25gfresh basil
  • 8 small red tomatoes


Cooking Directions:

  1. Blanch asparagus, sauté asparagus & capsicums in a little oil until tender, but still holding together and toss the pine nut, season with AJI-SHIO® Flavoured Pepper, keep aside.
  2. Season the fish with sprinkles of SERI-AJI® Cina & sear the fish, place in an oven at 160°C to cook thru.
  3. Sauté garlic and baby spinach for a few seconds & season with AJI-SHIO® Pepper & salt.
  4. Place basil & sunflower oil in a blender, blend until smooth, strain & keep aside.
  5. Serve the fish, tomato & sautéed vegetables with basil oil.
